Oefff, if this one doesn’t get your mouth watering, we don’t know what will! Whether you’re a baker at heart or just want to whip something up for a friend’s birthday, this quick and easy chai cake recipe by @sovegan is so worth it. Some essential ingredients that pull this together are: a plant-based milk of your choice, vegan butter and apple cider vinegar.

#7: BLUEBERRY MUFFIN BAKED OATS

Whether you believe breakfast is the most important meal of the day or not, these baked oats will bring some excitement to breaking your fast. Created by vegan fitness and food blogger @naturallystefanie, this heart and belly-warming meal requires some fresh blueberries and is best paired with plant-based coconut yogurt.

#6: VEGAN BEEF STIR FRY

Next up we have @vegandreas and his quick and easy vegan beef stir fry. Not sure how to incorporate some plant-based meat alternatives into your diet? Well, here’s one recipe you’re going to want to try! We recommend using chunky strips as your beef replacement in this well-rounded, healthy meal. 

#5: ROCKY ROAD BROWNIES

While Morgan Shelly initially released this delectable recipe as a Valentine’s Day treat, we believe that there’s always a reason to have such delicious brownies in the house! Gluten-free, vegan, but certainly not lacking in flavour, her recipe allows you to get creative with your ingredients and your favourite vegan chocolates, marshmallows and nuts to the mix. We know these dark chocolate peas will add the perfect crunch and that a white chocolate with almond milk topping will just melt in your mouth.

#4: MINTY PEA HUMMUS QUINOA BOWLS

Whatever your old summer staple, these quinoa bowls by @nourishing.amy are a serious upgrade. Packed with healthy plant-based protein like quinoa and chickpeas, this is a well-balanced and nutrition-filled lunch option that will keep you fueled for the whole day! Top your bowl off with some avocado and pumpkin seeds.

#3: POTATO AND COURGETTE SALAD

Potatoes… Need we say more?! @boroughchef brings a creative twist to the humble potato by adding courgette, mint, capers and a delicious dressing of dijon mustard and white wine vinegar. While this recipe has feta as a topping, it is very easy to make vegan by excluding the feta or, better yet, replacing it with one of our dairy-free cheese alternatives.

#2: LOADED CRUMPETS WITH SMASHED EDAMAME AND MISO MUSHROOMS

We LOVE plant-based foodies and creators who are making delicious food accessible to everyone – like these loaded crumpets by @theplantryfoodblog. The flavoursome combination of edamame, onion, mint, lemon, miso, mushrooms makes a tasty topping for crumpets, toast, on potatoes or in a sandwich. And it’s quick and easy to whip up, so there’s no excuse for lacking lunchtime inspiration!

#1: CHOCOLATE POPCORN

Now, we’re aware that chocolate popcorn is not going to be your go-to weeknight meal, but this recipe by @minimin.eats is so easy and delightful that we couldn’t not include it… You’re going to need popcorn, chocolate, a microwave and just a few minutes to spare. This tasty treat is something you can throw together quickly – you won’t even have to press pause on movie night! The best part is that you can change it up by trying out this recipe with different chocolates – from salted caramel, to dark or roasted hazelnut – the world is your oyster. We’d also chuck in some maltybites for extra crunch.
